Why does Nickel Chloride hexahydrate cake easily?

1.Main reason is its strongly hygroscopic and deliquescent . Nickel chloride hexahydrate crystals have a highly polar surface and readily adsorb water vapor from the air;

2. The crystalline structure is prone to instability due to the presence of water molecules. Even slight changes in temperature and humidity can cause the system to become unbalanced, Repeated wet-dry cycles cause the particle contact surfaces to undergo recrystallization and adhesion, resulting in rapid hardening and formation of lumps.

When used in electroplating, under what situation has to use nickel chloride ,not nickel sulphate?

The core reason is that nitrate is a strong oxidizing agent, which preferentially reduces at the cathode, severely interfering with nickel ion deposition and damaging the coating quality.
